Where can I buy a good waffle iron?

I want to make Liege waffles, and most recipes suggest using cast iron waffle makers, and preferably the real deal (which is 20 pounds or more). Does anyone know where I can get one that is not outrageously expensive? Or can I use any waffle maker? which one would you guys suggest?

I just looked up leige waffles, and that’s exactly the type of waffle my waffle iron makes.

Waffle irons in my area are easy to score at thrift stores and garage sales as they are popular gifts and most folks get tired of them taking up the cabinet and counter space. I’d look for one that is very clean, preferably in it’s original box, when you are shopping. With waffle irons, the heavier the better. Be sure the surfaces of the inside haven’t been damaged by cleaning, if the surface is damaged, your waffles will stick. Pay attention to what sort of texture the iron will give you, some are much deeper than others.

I ignored the clean in a box suggestion when I bought my current waffle iron through, and LOVE the waffles it makes.

It’s a Vitantonio (or something like that) which is no longer made. I didn’t know that when I bought it, just that it was super heavy and looked expensive. The inside was filthy with sprayed on then cooked on oil that had then gotten dusty and then sat in a cabinet for years. It smelled like stale, cooked cooking oil and the inside was covered with black gunk, but the outside was perfect, and it was obvious the owners had used it very little, improperly, then never cleaned it. (NEVER use spray on oil on a waffle maker! It makes a big mess and is really hard to clean. If your waffles stick to the iron, you don’t have enough oil in the batter.)

I paid a couple dollars for it, read up on how to clean waffle irons and spent probably 4 hours (in 15-20 minute increments – swearing and trying to talk myself into tossing it the whole time) cleaning the thing with wooden skewer tips after soaking all the old crusty stuff in olive oil for a day. Then I cooked a few batches of waffles for the dogs, then cleaned it again before I tried eating off it myself. It makes AMAZING waffles, and I would never ever have bought this machine new because it would have cost way too much.

I make really incredible waffles with my rescued and rehabilitated machine, here’s how:

Bob’s Red Mill Whole Grain Buttermilk Pancake and Waffle Mix (Bob’s makes several versions of Pancake Mix, I’ve tried them all and like this one best), following directions for waffles wtih milk instead of water and smidgen more oil than the recipe calls for as anti-stick insurance. I use nut oils like almond, walnut or hazelnut, organic milk and super excellent local eggs.

I also add a couple dashes of cinnamon, several drops of vanilla and two or three drops of Boyajin Orange, Tangerine or Lemon oil (just trust me and get some, it lasts forever and is the secret of much of my baking) to the batter.

Then I cook the waffles according to instructions for the waffle maker.

With real maple syrup, some 2% Fage yogurt and some fresh fruit, these waffles can’t be beat and are also very healthy!

The tricks to really good waffles are great tasting batter that is the right consistancy and oil content and cooking them til the batter is completely cooked and the outside is nicely browned. For a crispier waffle, leave them on the iron a little longer. If you make waffles every day paying attention and tweaking your process a little every day, you’ll be a waffle expert and a hero to your friends, family and pets by the end of a month.
